Preparations for the biannual Scandinavian Dinner at Faith Lutheran Church have been in full swing for a couple of weeks. Last week, the kitchen crew focused on creating tasty cookies that will be offered at the dinner. The Krumkake cookies, shown here, are quite labor intensive with one person running the waffle-type iron and another shaping the cone-shaped cookies. They also made Sandbaakels, a tiny tart that is traditionally filled with lingonberries but will be filled with cherries for this dinner. The recipes are generally passed down from family members although nowadays, many can be found almost anywhere.
Clarice Brady, on the left, said she doesn’t remember learning how to make the cookies; she’s just always done it. Helping Brady is Ellen Gaulke. Gaulke didn’t even need a timer to tell when the cookies were finished in the iron, she just methodically poured in the batter, held the lid down for 90 seconds and lifted the cookie out. Ross Damrow and Helen Volden are making Krumkake at the second station also.
The Scandinavian Dinner will be held on Saturday, January 28, from 3 to 7 p.m. The feast will include lutefisk, pickled herring, lefse, Swedish meatballs, boiled potatoes, bean salad, cranberries and all the trimmings. Tickets are $17 for adults and $5 for children 16 and under.
This is a celebration of the Nordic countries as well as a benefit for special projects and the general fund for the church. This has been a tradition of Faith Lutheran since 1974.
The church is located at 171 Lewis Lane in Hamilton and the public is cordially invited.
